There are a whole lot of pigs. But what about Iberian ones? Here’s some help so you can identify an Iberian pig in three easy steps:
The hoof The black hoof is the most popular distinctive sign when identifying an Iberico ham. Hoof nails of the same size and separated from each other is a sign the animal has been freely grazing outdoors. On the other hand, an inner nail that is shorter than the outer one indicates the animal has not done much exercise which is why they have not been worn down. The legs The ankle should be thin and long which is a sign of breed purity. A fatty wide thigh indicates the animal has done exercise searching for acorns during the montanera free-grazing season and, thus, has better developed its muscles with more fat infiltration. The fat The fat covering an Iberico ham is abundant and the fat on the side is shiny and fluid. This fat is soft to the touch and easily sinks when pressed.
